Anyone putting up fruit in brandy? Or making limoncello? Will you share your favorite liqueur recipe here?

I saw little green ume plums at the market this morning, so I am going to make umeshu (using this recipe, except I am subbing brandy for the vodka-- less neutral, but the flavors should play nicely together). I made this a few years ago, and it is equally pleasant as a topping for ice cream or mixed 1:1 with soda water in hot weather.

I will see my aunt and great aunt next week and will try to get their recipes for limoncello and pomegranate raki. By try I mean they are usually happy to share technique, but neither one does exact measurements. They are both more instinctual liqueur makers.

I do know that my aunt insists on only organic lemons for limoncello and has found EverClear superior to vodka. Not sure if she has ever tried with grappa.
