Speaking conversational Hebrew and speaking the kind of Hebrew needed to translate a legal document are two really different things. If it's actually a ketubah (a version of which is used in virtually all Jewish weddings, although the formatting and content vary between denominations), then it would be in Aramaic, anyway.
