Homemade Enchilada Sauce

You will never buy the orange stuff in the can again!  Takes about 10 mins to make.  

Pro tip:  measure everything out before you start and have it very close to you.  This comes together fast.

Ingredients:

3 tbs of olive oil 

3 tbs flour

1 tbs chili powder (more if you like spicy sauce)

1 tsp cumin

1/2 tsp garlic powder

1/4 tsp oregano

1/4 tsp salt

pinch of cinnamon

2 tbs tomato paste

2 c chicken broth

Method:

Make a roux of 3 tbs olive oil and 3 tbs flour in a saucepan.  Whisk, whisk, whisk for 3-5  mins until golden brown.  Add in the spices, paste and whisk whisk whisk.  Add in broth and whisk again, get all those lumps out.  Simmer for 5-8 minutes and you are done.  I think this would be great with a little cocoa powder in it to, for a left handed mole sauce.
