Scalloped Corn, or El Torito Corn Spoonbread

After going thru my recipe box for the bean recipe, I found this gem.  If you have ever eaten at El Torito Mexican restaurants (CA-not sure if they are elsewhere) they have this amazing corn spoonbread... and you only get a dab.

Here, this is made as a side dish and is called Scalloped Corn, why, I don't know.  It is delicious.  And not for those on a calorie restricted diet  ...

  • 1 egg
  • 1 can of creamed corn 
  • 1 can of whole corn, drained (you can also use frozen)
  • 1 stick of butter (softened to room temp)
  • 1 box of Jiffy cornbread mix

Mix it all together.  Bake at 350 for an hour.
