Happy St. Patrick's Day

No interesting National Days today except for St. Paddy's Day and Corned Beef and Cabbage Day (someone was phoned that one in.)

So here's a tip from this plastic paddy...

Huge stock pot and cook your corned beef low and slow*.  Toward the end toss in the potatoes and when those are halfway done, the cabbage.  Flavors the veg from cooking in the same water and only have to wash one pot.  

Or you could do this for dinner...

*As I've told my husband repeatedly (who isn't even a plastic paddy, he's no kind of paddy) this isn't a weekday/throw it on when you get home from work dish.  Corned beef needs to be cooked forever to be fork tender (and I'm not a huge fan to begin with so fucking it up means I have to scramble some eggs for dinner.)

A word on the plastic paddy thing...I, like millions of my fellow Americans of Irish descent, know we are not Irish nationals.  We have no claim to current culture, politics, or Bono.  

However...

As long we carry DNA which makes our hair too red to go blonde without toner, skin so pale we risk melanoma walking to our cars, tempers that flare at injustice, and a deep and abiding love of potatoes, family, and a lively debate then we, too, carry our ancestral heritage.   And many of us will celebrate that by dining on the (admittedly fake American take on) atrocity of boiled beef.  And some of us may lift a glass**...or two...in celebration of St. Patrick and the plastic shamrocks sold by Party City by the truckload in his honor.

**Although mine won't be whiskey or beer because...yucky...it will be a french martini or a cosmo.  Stop judging me - I'm only Irish on me mother's side.  And to all the latter diaspora of the ancient line of Mac Caochlaoich - may your shillelagh always find it's mark!

All of this, except the beef. No thanks on that. Also, shamrocks and shenanigans sound like a lot of fun.

As far back as I know, the red hair and pale skin in my family is from Scotland and Germany. So, the pin on my coat today says "Irish for a Day". (I do love good corned beef with some fresh soda bread.)

My glass had mead in it, and we had tacos, but that's me all over, right down to my brown hair that doesn't go blonde. I finally gave up and just red outright. I might have to go get some corned beef hash tomorrow. I've been craving some beef and potatoes.

      Oh penguin that thing is ugly. Someone in their circle should crochet them a cute one. Here's another option for when the child is a smidge older; it even includes a bow so you can distinguish that she's a penguinette.

      It's weird how it's never the ideology that is flawed or incorrect.  No, it's definitely that people are doing it wrong, because if they were doing it right, it would work.

      Yeah, it's a big thing in Hawaii/Alaska too, and I don't think it has anything to do with religion or Jesus.
