For @Bethella who asked for the Pumpkin Angel Food Cake recipe over in the venting thread.

1 - 1 step angel food cake mix

1 can (15 ounces) pumpkin (pumpkin NOT pumpkin pie filling)

3/4 cup water

1 tsp Cinnamon

1/2 tsp ground clove

1/4 tsp nutmeg

Bake in a 350-degree oven for 30 minutes (and since it is pumpkin I typically put it in a bundt cake pan so that it sort of looks like a half pumpkin).  (If I did the recipe builder on weight watchers correctly 1 point for 1/12 of this)

 

You can do something similar with the 1 step angel food cake mix and a can of unsweetened crushed pineapple.  substitute the pineapple for the water the mix calls for, combine and bake per the package directions.

I just ordered a baking stone because I think I'm going to do the turkey differently this year.  I saw this video on America's Test Kitchen about heating the roasting pan on a baking stone till it's really hot and roasting your dry-brined turkey in the hot pan placed in the hot oven.  The baking stone keeps the bottom of the pan hot and the tented breast of the bird keeps it from getting over-roasted and dry.  It's supposed to be as good as my recipe I got from James Beard's Theory and Practice of Good Cooking where I have to flip the bird from one side to the other and then breast up.  That method is delicious, but it is a lot of work and requires a helper.  I also want to make giblet gravy and stuffing from scratch.  Stuffing from scratch doesn't have to be lots of work.

Just picked up the turkey that we'll fry this year.  Lately we've been getting two smaller turkeys - one to make in the traditional manner and the other to deep fry.  I found a 9.5 pound one to fry.  Looking forward to having some turkey for Thanksgiving.

We're going non-traditional this year and having the Thanksgiving buffet at a somewhat nearby casino. (My mother-in-law is in the end stages of Alzheimer's & my husband would just feel like his mom was missing if we were around my family)  So we're doing non-traditional holidays. 

It's sad, but part of it is also because we also wanted something that if a phone call comes, we can leave or cancel without inconveniencing anyone else, but be distracted in the meantime.

This year it will be my husband, our daughter, and his mom. I'm planning a lot of food! 

apple cranberry walnut salad             

spinach artichoke stuffed mushrooms 

cranberry fluff

ham

turkey

stuffing

2 kinds of mashed potatoes 

gravy

green bean casserole 

rolls

 corn

cranberry sauce

I might make pineapple casserole also but I haven't decided for sure.

My side is doing an early dinner at a country club. We did this last year too. Last year it was because both my uncles and an aunt came home and it would have been a tight squeeze - this year it’s likely to spare my mom all the work since she’s exhausted from watching my nephew during the week. My siblings and I can’t host because of space limitations and my grandparents are 85... I wish we could do a traditional dinner like we used to, but I’d rather my mom have the day off completely. Maybe husband and I can offer to host if we move to a bigger place soon. Or maybe offer to cook the food and transport it next year. 

We’re still doing the normal dinner at my in-law’s though. And we have Friendsgiving coming up soon too. So we’ll have some good home cooked food to look forward too, as well as a nice meal out as well.
