Freezing fresh herbs.

Any advice?

My coriander is bursting and there is no way I can use it all. Same with parsley and basil. The basil I can make in to pesto but I would like to keep some.

Use ice cube trays. Chop up your herbs, fill the cubes a little over halfway, top up with water. Freeze, then pop the cubes into a plastic storage bag and keep in the freezer. When needed for soup, stews, braises, take as many cubes as you need and throw them into the cooking pot.

I put mine in a single layer between two sheets of paper towels, and place that into a plastic bag. The frozen herbs become crumbly, and can easily be added into recipes.

Thanks guys. I was hoping to keep some of the herbs whole for garnish etc. Maybe not possible :(

Yeah frozen herbs aren't great for garnishing because when they defrost, they get soggy. Dehydration might be an option, though I'm not sure how long those would last.

With parsley I leave some whole (stalks and everyting, the bigger ones really) and just put them on a tray and freeze them, and after that put them in the bag - I use that for soups and stocks. The washed and dried parsley I chop, put in containers and basically just freeze it - and then I scrape the desire amount on my food. Not my first choice but with abundance it's a shame if it would go to waste.

The same I do with chives, coriander, only basil I leave the leaves whole and just freeze them on a tray.

Dehydration is a waste of effort for parsley and basil. They lose most of their flavor profile. The only basil I dry is Greek basil, because it loses the least, and it is still nothing to write home about. With both parsley and basil it is pesto, freeze, or bust. :(

You can also make coriander into pesto - the one deciding factor is how much you actually like the stuff. If you love it, then pesto is a great way to use a lot of it up.

I now have a used Mac. I am trying to get used to it.       I frigging hate the toilets at this worksite. Specifically the door locks. Stupid little knoblet that isn't clear if it is locked or not. Door opens right off the main hallway and the toilet is just far enough from the door that I can't just hold the door shut in case I've got the lock wrong. I mean really people, how hard is it to design this? I just want to pee in private with no anxiety. Apparently that is too much to ask for.
