I just scrolled down my feed and saw this post from my cousin:

Tater Tot Casserole (One of Jim Bob’s Favorites!)

Ingredients: 2 lb ground turkey cooked, seasoned, drained

3-2lb bags tater tots

2 cans cream of mushroom

2 cans evaporated milk

2 cans cream of chicken

At 350 for one hour.

I am gagging and that banging sound you just heard was the sound of my arteries slamming shut. I want to warn my cousin, but that side of the family isn't exactly...refined, so I'll just let him stew in his salty-ness.

Not what I was expecting this evening.

Yuck yuck yuck yuck. I hate cream 'o anything. I hate tater tot casserole. My mom LOVES it, she made that shit so much when I was growing up. UGH!

Not a single veggie? I could see cutting way back on the cream o' and adding veggies of your choice (evaporated milk? WTF???) as I've had a version along those lines that wasn't half bad. Even though my non-cook grandma made it and I have no idea if she knows anything about the Duggars and mom warned me what was for dinner before we went in so I could get my laughter out of the way.

And I have what is probably an unholy fondness for tater tots. I know they don't really qualify as food. But...yummy.

How does this not turn into a soggy mess?

I've got nothing against tater tots, but why mistreat them so badly?

I can't imagine eating such a veggie free diet. I eat my share of junk food, but I will start to have insane cravings for any fresh veggie or salad if I am eating badly for a while (or am traveling).

Does your cousin know that they'll be dead (or close to it) after consuming this? :? Each one of those cans individually has (undoubtedly) more than your recommended daily intake of sodium. :puke-huge:

Holy shit, I don't even want to know how much sodium that contains.

I'm with Blueberry Bird on needing veggies, i couldn't last very long in the Duggar household.

You can sub the soup with low fat versions, low salt versions. The Dugggars are cooking for an army and not just 2-4 which epxlains the 4 cans of soup. I see nothing wrong with treating yourself to this every now and then but not every week and especially not for company. Most of the Duggar recipes are alike and not very creative. Leg humpers like how the Duggar girls are skilled at cooking but I don't think opening cans of this and that call for much skill.

I seriously think this recipe is gross. ALL cream something. Just yuck.

On the recent episode when Michelle was teaching Sarah Pope how to make it, I get the feeling Sarah Pope was used to making more healthy things and a bit confused why this was such a lauded recipe. And Michelle says it needs to be in everyone's recipe book GAG. Was she joking? Does she not realise most people can make more delicious and healthy meals just as easily?

I'm from the south, and I love me a good casserole, but this crap no way not without some major tweaking of the recipe. Off the top of my head I could come up with a better, healthier alternitive how about.

1 bag of tater tots or hey why not just thinly slice up a potato

1 pound of lean ground turkey or turkey sausage

1. can diced tomatoes

1. small onion diced

1. green pepper diced

1. bag of real shredded cheese

I'd substitute the cream of crap soup for some low sodium chicken broth or if I wanted something creamier make a homemade cheese sauce. For a nice yummy topping I'd mix some panko bread crumbs, spices and a cup or two of the bag of shredded cheese.

I don't see why they don't eat more soups and stews they could buy cheaper cuts of meat put them in a crock pot and slow cook them until they become tender and add some veggies a bag or two of potatoes is fairly cheap add some carrots, celery and onions and you have a basic beef stew.

They could also fix a big pot of pinto beans and some corn bread it's cheap and was a staple in my area a generation or two ago. They could also fix a big pot of chili beans I have a recipe that calls for a salsa made with mangoes and pineapple that adds a sweet spicy kick that most kids like better than chili made with lots of hot peppers.

I still can't see why with all those boys running around they can't plant a garden and an orchard to provide them with a cheap source of fruits and veggies; and buy a few cows and chickens for a cheap source of eggs, dairy products and meat. A family that big more than has the time and resources to run a small farm.

I make Tater Tot casserole for my kids, and it has no cream of whatever canned soup in it! It is ground turkey, mushrooms, frozen mixed veg, tater tots, and I guess you could call it home made cream soup, but not really. I also make it in a deep dish, so there isn't a lot of tater tots in each serving (besides, my youngest won't eat tater tots). Mine is more veg than anything.

That recipe? disgusting! The proportions sound off to me, 2# of ground turkey and 6# of tater tots? I use 1# of ground turkey and maybe 1/2 pound of tater tots for 5 people (like I said, lots of veggies!).

Ingredients: 2 lb ground turkey cooked, seasoned, drained

3-2lb bags tater tots

2 cans cream of mushroom

2 cans evaporated milk

2 cans cream of chicken

This works out to 15% lean meat, and 85% assorted crap.

Did the original recipe-maker think that using ground turkey instead of ground beef would render this slop "nutritious"?

pixydust and NjoyingNsanity have got the idea right.

I am reminded of the chickenetti recipe that recommended cheese biscuits as a side dish. FFS, these folks live in the South, where the soil is lush and the growing season long! Shouldn't there be an abundance of fresh produce to choose from and enjoy?

Heck, I'm feeling guilty and deprived because I didn't have my big bowl of green salad with dinner last night.

Not a single veggie?

But...but...there are TATER TOTS in it! That's a lot of POTATOES! And cream of MUSHROOM soup! So you get mushrooms, too! There are TOO veggies in it!*

*Yeah, if you think like the Duggars probably do on this one.

I've got nothing against tater tots, but why mistreat them so badly?

This! So much this! What did those poor innocent tater tots do to deserve that fate? Is there a PETA-like organization that looks out for tater tots the way PETA claims to look out for animals? They must be alerted to this mistreatment. :D

As for the tater tots -- I tried making this recipe once, added canned veggies, and poured the soup over the tots. They actually didn't get soggy and did crisp on top. That said, I didn't care much for it and wouldn't make it again.

I could see using Tater Tots as an alternative topping for a shepherd's pie in lieu of mashed potatoes.

Maybe a shepherd's pie was the original idea of 'tater tot casserole'.

Growing a garden in Arkansas can be challenging. The soil is very poor in parts of the state. My relatives have had trouble with grass at times.

NjoyingNsanity, your ideas for updating tater-tot casserole sound good. Also your recipe for the chili beans with the mango-pineapple salsa sounds awesome. I'd love to have it (if I can derail the thread for just a moment).

I'm with you on the stews and soups, those are staples for me during the winter, and it's an easy way to use up vegetables that are starting to be a little less than perfectly fresh. I enjoy raw produce like salads too, but those veggies really have to be at peak to enjoy fresh (at least, for me). Most soup/stew recipes make such large quantities also, so it would work well for a big family, and per serving tend to be pretty economical.

The Duggars definitely have the resources to plant a garden. I've also wondered why they don't.

I have been known to top my shepherd's pie with hashbrown potatoes in a pinch. Tater tots wouldn't be bad either.

I wonder if someone could make a healthier and better version of TTC with sweet potato tots...

Okay, that would make sense as to why a garden might not be great.

That being said, I've managed to grow a surprising number of things like fresh herbs and a few veggies in a container garden. At least growing a few fresh herbs or seasonings might inspire a couple of new recipes for the clan. What struck me about the original tater-tot casserole recipe was how bland it sounded. No real seasoning other than a lot of salt.

The Tater Tot cassarole is very nutritious! I find when I'm not getting enough sodium in my diet, tater-tot cassarole fills the void and then some. And the next time the doctor says "your cholesterol is wayyyy too low, tater-tot cassarole to the rescue. Also, if you're having trouble putting on weight, I think the amount of fat and calories in it would aid in that.

I'm going to make a great big batch for dh and I for supper tonight! MMmmm MMmmm Good! .....or not.

Cousin has not updated his Facebook status since the tater tot casserole post. I can only assume he has shriveled like a slug from the high sodium content.

Ok, that had me laughing to the point where I choked on a potato chip.

How hard would it be to toss a couple of pounds of mixed, frozen veggies into that slop?
